In Spain, however, migas are more often made from day-old bread cooked with leftover meats. It can mean many different things depending on where you are in the world, but this recipe is for Mexican migas.

Are migas and chilaquiles the same thing?

Nope! Chilaquiles are tortilla chips cooked in salsa. However, in some areas of Mexico, they refer to chilaquiles as migas, which can be confusing!

Can I add meat to migas?

You sure can! Crumbled chorizo would be a wonderful addition, but you could also add chopped bacon, ham, or breakfast sausages.

Are migas crunchy?

The tortilla pieces are part crunchy, part soggy, and the eggs are soft and fluffy, creating a variety of textures.

Spice up your morning with this migas breakfast! Yummy eggs over crispy tortilla strips are the perfect dish for any occasion.

Instructions

  • Heat the oil in a large skillet set over medium-high heat.

    ¼ cup canola oil

  • Add the eggs, garlic powder, onion powder, and salt to a large bowl and whisk to combine. Set aside.

    8 large eggs, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ½ teaspoon kosher salt

  • Once the skillet is heated, add in the corn tortilla strips, and fry until golden brown and crispy.

    6 corn tortillas

  • Sprinkle with salt, if desired.

  • Turn the heat down to medium, and pour in the eggs.

  • Use a spatula to gently scramble the eggs, folding them into the tortilla strips, until they reach a soft, scrambled texture.

  • Remove from heat and top with cilantro, cotija cheese, pico de gallo, and avocado slices.
